This is a lean cut of meat from the shoulder of a deer. It is packed full off iron and is lean in fat making it a great addition to a healthy diet. Being a whole shoulder on the bone gives it more flavour when cooked. The best way to cook this is slow-cooked or roasted and then puled off the bone, this captures the tenderness of the venison.
